We grow delicious Shiitake, Oyster, and Wine Cap Mushrooms.  We have a great environment on our farm for growing these wonderful mushrooms.  We sell our mushrooms fresh, dried, and in seasonings.  Our dried mushrooms  and mushroom seasoning can be purchased on our website soon.  All of our mushroom and mushroom products can be purchased at our local farmers markets.

Our mushrooms are grown on Wisconsin oak logs and other hardwoods depending on the variety of mushroom.  The mushroom spawn is Certified Organic and produced organically.  We are in the process of having mushrooms added to our Organic Certification this season.

Shiitake Mushrooms

Not only are Shiitake Mushrooms delicious, they are  high in protein and low in fat.  Fresh and dried shiitakes are also:

• high in vitamins, minerals, and fiber

• packed with nutrients to fight cancer

• reduce high blood pressure 

• strengthen the immune systems due to the lentinan properties that increase activity of immune defenses against viruses and tumor cells

• improve circulation

• improve liver function

• cholesterol-lowering properties due to their content of eritadenine

• Shiitakes have been grown and used for centuries in Asia for their health benefits and wonderful flavor, but is a new mushroom introduced to US production in the early 1970’s.

• Excellent source of the B vitamin pantothenic acid (B5), B6, riboflavin, niacin, B6, foliate and thiamin, selenium, manganese, zinc, magnesium, and iron

• Dried shiitakes are higher in vitamin D

• The stems are fibrous and should be removed right before cooking.  They can be boiled for a mushroom stock.

Easy ways to prepare Shiitakes

• Grill gill side up for 2-3 minutes and turn over for another 2-3 minutes.  Optional: brush with olive oil, dip cooked mushroom in soy sauce

• Sun-dry mushrooms or use a dehydrator for future use or for tea
• Use in stir-fries or pasta
• Broil gill side up until you see moisture beads on the gills.  Watch closely!
• Cream of Mushroom Soup
• Sautee sliced or whole mushrooms over low heat using butter or olive oil until texture is soft (10-15 minutes).  Sample as it cooks to see how you like the texture.  We like it a little crispy, but many like the texture softer.                             

                 Use this over steak, in a hamburger, in an omelet or quiche, over pizza,  as a side dish,          sautéed with other veggies, freeze in an air tight zip-lock bag for future use, etc.

Dried Mushrooms

Dried mushrooms can be store indefinitely.  They have a wonderful smoky flavor and meaty texture with a stronger flavor than fresh ones and are pack in more nutrition.  They don’t sauté well, but are perfect for soups, stews, gravies, baked, in pasta, or tea.

Rehydrating Dried Shiitake

•  Boil water (or broth) in a pan, remove from heat, soak mushrooms for 20 minutes or until they reach a   soft texture.  You can save this water for use as a stock for flavoring later.
• Using an herb or coffee grinder or food processor, grind into powder for use in tea, soup, or pasta.
• Medicinal Tea: 2 dried shiitake mushroom caps broken into bits put into 1 cup of boiling water and seep for 30 minutes.  Drink about ¼ cup several hours apart.  Save mushrooms to be eaten!  This tea is great to reduce high blood pressure, reduces hunger pains, calm nerves, sooth sore muscles, and can reduce headaches among many other health benefits.

Cleaning Mushrooms

It is unnecessary to use water to clean mushrooms.  They can be brushed off with a cloth or mushroom brush right before using.  We try to bring you the cleanest mushrooms, and we only occasionally wipe a few off that may have a little wood debris.
